THE STORY OF BEYAZ FIRIN…
169 YEARS ago…
Baker George Stoyanof of the Stoyanof family migrating from Macedonia to Istanbul opens his first bagel shop in Balat..
Later in 1864 George’s son Kozma Stoyanof opens the famous Sarıyer Börekçi which will denote the pastries for many years to come. George’s other son Grigor opens in 1872 Karaköy Börekçisi, which shall also become famous.The third son Dimitri Stoyanof (my grandfather) purchases the place of today’s Akveren Bakery in 1907.
In 1927 Dimitri’s sons Dino, Lambo and George brothers rent the place of Beyaz Fırın at Karaköy. Until 1953 this bakery is named, known and very much loved by the people as the “Bakery of the Bulgarians”. In the war years during the Second World War due to absence of materials they sell only bitter almond.
In 1953 Dimitri’s sons Lambo and George Stoyanof brothers open the BEYAZ FIRIN at Muvakıthane Cad. No 27 (Today’s İnegöl Köftecisi). This place is renovated and opened in 1960 as BEYAZ FIRIN.
BEYAZ FIRIN
In 1977 due to the sickness of his uncles Lambo and George, Dimitri Stoyanof begins to manage BEYAZ FIRIN. In 1980 Beyaz FIRIN is renovated and remains up to day.
On September 18th, 1993 the Cemil Topuzlu Branch of BEYAZ FIRIN is opened. The fifth generation member of the Stoyanof family Nathalie Stoyanof completes her education and participates to the work.As can be seen bakery is in the genes of the Stoyanof family. We do this work for five generations. As examples in Europe in winery and bakeries we wish to continue this work for many centuries as a family tradition and profession.
